A traditional summer recipe from Nice


- 100g Flour
- 15cl Milk
- 2 Eggs
- pinch of Salt & pepper
- plenty of Oil

Trim the flowers of any green bits (stalks fromthe male flowers, fruit from the female flowers) and delicately remove the stamen from the inside and throw it. This is a fiddle but worth it. The flowers can be stuffed with cheese. Toss in the batter and fry until golden. Sprinkle with rock salt and crushed pepper. Perfect when hot, but also delicious when warm.
