- enough to fill the bowl full Blackberries, blackcurrants, redcurrants, cherries (stoned), raspberries etc
- to taste sugar
- 1 loaf White bread, sliced, crusts removed

Line a pudding basin with sliced white bread with the crusts removed. Fill with mixed red summer fruit . If the fruit is very tart you can mix some sugar in. When the bowl is full, top with white bread and weight it down. Leave over night in the fridge. The next day turn out onto a plate - it will hold the shape of the bowl and the juice will have soaked into the bread. Serve with cream.
