Ingredients

Peel, chop into chunks the sweet potato and boil it until 80% soft

In a pan add half a tsp oil and sauté the chopped kale leaves till crisp. This will take 3-4 minutes.

In another pan, add oil, sauté the onions and ginger caramelising it for about 5 minutes

Add the chopped tomatoes to the onion and ginger mix and saute for another 10 min on simmer

Cool off the tomato onion and ginger mix in 4 and blend in a blender till it becomes a paste.

Add about half- three quarters cup of water in a pan and bring it boil, add the kale and sweet potato and cook for 5 min

Add a can of coconut milk (if needed some coconut cream if you wish the mix to be thicker and creamier)

Let it come to boil, add the tomato, onion, ginger paste from step 5

Add the spices – curry powder, cumin powder, turmeric powder and salt to taste

Bring to a sim and let the mix cook for about 10 min

Turn off the gas and its ready to eat!
