- pinch Chilli flakes

- 1 tbsp Olive oil
- Vegan sausages
- Kale, chopped coarsely
- 1 Onion diced fine
- 2 Tomatoes finely chopped
- ½ cup Puy lentils 1/2 cup
  1. Grill the sausages in the oven till they are half cooked. This will take only 5-6 minutes in 170C. Vegan sausages cook faster than meat so be careful to check often to ensure they don’t burn.

  2. Meanwhile cook puy lentils in boiling water. In another pan, saute kale till half cooked, you can add a pinch of salt so the water oozes out and the kale cooks in it. Leave the kale with the drops of water. Don’t leave it to dry. This will be added in the later step.

  3. Take a pan, add oil

  4. Saute the chopped onions, follow them with tomatoes after 5 minutes and add the puy lentils.

  5. Add the provencal dried herbs, chilli flakes and salt

  6. Add the moist kale from step 2 and cooked puy lentils and sausages. If too dry add some water and let it boil

7)After 5 minutes you can transfer into the oven to settle for about 10 min in 120C . The sausages will get cooked fully during these steps 6 and 7. But don’t let it get too dry.
