a vegan take on tuna steaks
Cut the watermelon into triangular wedges, one wedge per person, around 1.5cm thick and dry on paper towel. The aim is to have as little water as possible.
Heat up oil in a frying pan, amply season the steaks with sea salt and crushed pepper and fry on both sides. The aim is to evaporate the water and concentrate the flavour, so the longer you cook, the stronger the flavour. I could for 10 minutes each side, which is I think the minimum time required. These could apparently also be barbecued or grilled
